[Hoshino Resorts: Behind the Scenes of Hospitality] A boatman opens a bar in a 130-year-old warehouse. The story behind the creation of Hoshinoya Kyoto’s “Koukou Bar”

Posted on August 25, 2026 by Editor in Chief

The story takes place at Hoshinoya Kyoto. “Hoshinoya” is a brand where each property embraces a unique theme and offers an utterly extraordinary experience while respecting the local history and culture. To ensure guests can immerse themselves in the local story and enjoy a stay where they lose track of time, the staff behind the scenes have accumulated countless trials and errors, as well as an unwavering commitment to detail. This time, we’d like to share the story of a rather unique bar that has opened at “Hoshinoya Kyoto,” nestled in the Arashiyama gorge. It is also a record of the unprecedented challenge undertaken by a staff member who normally works as a “boatman” on the river, as he experimented with blending scents and whiskey within a historic storehouse.

When the warehouse transforms into the best seat in the house at that very moment Even now, Omote spends his days on the river. He takes the helm and navigates the waters of Arashigawa Gorge. Then, when night falls, he stands behind the counter at the warehouse, quietly welcoming guests. A serene space sheltered by 130-year-old beams. The flickering flame of a candle. And the scents and whiskey that resonate across time. A night in the depths of Oku-Arashiyama, accessible only by boat. When a cocktail—named with the wish that “the scenery would come to mind”—lights up someone’s night, the Kunkō Bar transforms into the “prime seat” for that very moment. At the Kunkō Bar, you can enjoy the harmony created by the rich aroma of whiskey and the delicate scents of aromatic woods and ingredients that have matured over time. On a quiet night in Okurayama, after savoring a glass of whiskey, take in the scents of aromatic woods and essences while immersing yourself in the culture nurtured in this ancient capital—a special space for adults to “savor the scents” to their heart’s content.
