I’ve tried JAL’s in-flight meals that are now on the summer menu. The “JAL Hawaiian Table” on the Hawaii route includes garlic shrimp with a kick of garlic!

JAL has changed some of its in-flight meals on international and domestic flights to summer menus starting June 1. In Premium Economy Class and Economy Class flights from Tokyo to Honolulu, JAL will offer “JAL Hawaiian Table,” an arrangement of local Hawaiian dishes such as garlic shrimp and poki, which are beloved by locals.

Kanako Yoshino of the Cabin Service Group, Product & Service Development Department, gave an overview of the summer menu. At the beginning of the presentation, she reported that JAL has been awarded a “5-star” rating by SKYTRAX, a British airline rating company, for nine consecutive years, especially in the areas of taste and relaxation, and that “you can feel like you are in a fine restaurant while on board”.

It is an adaptation of a local Hawaiian menu, consisting of salmon and quinoa poke-style salad, sweet potato salad with coconut milk, lemon cream penne with garlic shrimp for the main dish, white buns, and ice cream for dessert.

Menu items created by popular female chefs are offered in the upper class seats. The second menu item is supervised by Chef Nae Ogawa and Chef Natsuko Shoji, who are new to the program this year. Chef Ogawa supervised economy class in-flight meals in 2022, which were well received, and then expanded her activities by winning the Hale ‘Aina Award, the most prestigious award in the food and beverage industry in Hawaii, for four consecutive years starting in 2022. The summer menu will feature “Marinated Grilled Eggplant and Mussel with Tomato Consommé Jus”, “Lobster Salad with Prosciutto, Papaya and Lilikoi Vinaigrette”, and “Truffle and Beef in Red Wine with Truffle Gnocchi and Carrot Roti Broccoli”. Chef Natsuko Shoji is the owner-chef of été, a restaurant that only accepts one reservation per day, and is in charge of first and business class set menus on European and U.S. routes. JAL has requested this service at the timing of the renewal. Until now, after the first meal, passengers were able to order a la carte menus at any time of their choice. From now on, the airline will offer a special set menu to provide passengers with a higher sense of satisfaction and fulfillment before arriving at their destination after a long flight. The summer menu will offer “Summer Vegetables and Chicken Confit with Spiced Tomato Cream” and “Root Celery Coleslaw”. Since this is the second meal before arrival, the menu is a little lighter than the first course.
