Hakata Shogyo’s first restaurant “Tabijio by Hakata no Shio” at Matsuyama Airport. Offering salted oden and salted beer.

Hakata Salt Industry will open a stand bar “Tabijio by Hakata no Salt” in front of the international terminal on the first floor of the Matsuyama Airport Building at 12:00 p.m. on March 28, 2012.

This is the company’s first restaurant format store since its establishment in 1973. The name “Tabijio” is a coined word combining the words “travel” and “salt,” and is intended to convey the appeal of salt through food and drinks, rather than selling it directly. This is the first time in 12 years that a new restaurant has opened in the Matsuyama Airport Building.

The signature dish, “Shio Oden” was supervised by “Yamamoto Hyotaro Shoten,” an izakaya in Matsuyama City. Instead of using soy sauce, the soup stock is made from bonito flakes, kelp, and dried sardines, sweetened with sake and mirin, and seasoned with salt only.

For drinks, an original salt beer jointly developed with DD4D BREWING, a craft brewery also based in Matsuyama City, will be available. At the opening, “Salz ~Sansho Light Lager with Salt~,” a lager beer base with sansho (Japanese pepper) and Hakko salt, will be served on draft.

The store was designed by interior design studio COOPDESIGN Lab. The store’s exterior was designed in the motif of a salt kettle, and the interior is based on the color white to express the world of salt. In the center of the store is a digital signage system showing scenes of the sea and islands of Ehime.
