Ko’olau Distillery The Ko’olau Distillery, which we stopped at on our way back to Honolulu from Kailua, is a small but authentic made-in-Hawaii whiskey distillery at the foot of the Ko’olau Mountains. On Oahu, the trade winds hit the Ko’olau Mountains, bringing a lot of rain, which is slowly filtered by volcanic rocks and gushes to the surface of the earth. Ko’olau Distillery’s signature “Old Pali Road Whiskey” is made with such pure Hawaiian water.
